Paleo Chocolate Chip Cookies


Can’t believe I’ve never posted this recipe before.  These are very easy cookies to make and very tasty too.  The recipe for a full batch is below but I usually just halve it and it makes plenty.

Paleo Chocolate Chip Cookies

3 cups almond flour 1/2 cup coconut oil, melted 1/2 cup raw honey (I usually only use half this amount as it’s too sweet for me otherwise) 2 large eggs 1 tsp baking soda 1 tsp sea salt 1 tsp vanilla extract 1 1/2 dark chocolate chunks or cacao nibs

Mix the dry ingredients in a bowl (almond flour, baking soda, salt)
Mix the wet ingredients in a separate bowl (coconut oil, honey, eggs)
Add the wet ingredients to the dry ingredients, mix well.
Stir in chocolate chunks or cacao nibs or anything else you choose (I’ve also used sultanas with some ginger)
Form into cookie sized shapes and bake.

I bake at about 180-200°C until they are slightly firm to the touch/ slightly brown.  No idea how long this is – less than 20 minutes though.

They never actually last long though if I make a full batch I can usually keep some in the freezer for a little while.

Canned Mangos

We are in the midst of mango season here in Western Australia and it is no secret how much I love this time of year.  In fact I’m quite sad when it ends – it’s amazing having an abundance of ripe and sweet mangos available every week at the market at some decent prices too.  For a little while I was actually consuming them by the case.

 Given my love of the fruit and the withdrawals I feel sometime around mid-year when the only alternative are the really expensive, not at all ripe versions they ship us from Mexico I thought I’d try canning (jarring?) some to last through the year.

I searched many websites to  find a ‘how to’ of sorts but all suggested either preserving in a sugar syrup or other chemical(?) preservative.  I decided I’d give it a go without hoping that the sugar of the fruit would be sufficient to keep them from turning brown.  I can’t comment on how well this will work out as it’s only been a few weeks but I wanted to document the process I used anyway.

Canned Mangos
Mason Jars with sealable lids (the ones with the pop up part in the middle, usually come with the jars)
Big pot to cover jars with water
Mangos
Water

Pretty simple list of things needed.  I bought a pack of 6 small canning jars which came with the appropriate lids. 

These are the steps I followed:

Boil the jars in the pot of water to disinfect (can also be done in a dishwasher if you have one)

Disinfecting jars in boiling water
Chop up the mangos and squeeze the juice from the rind (thanks for this trick Neil)

Chopped up bowl of Mangos
Fill jars with mangos/ mango juice as much as possible

Filling up the jars with the Mangos and juices

Top up with water (ensure you get all the air bubbles out, I used a spoon to stir them out)

Filled jars ready for lids

Tighten lids on
Place sealed jars into the pot of boiling water
Let ‘cook’ for 20 minutes (ensure that the seal has formed on the lids)

Pretty easy and pretty tasty (I’ve tried two of the jars already as the seals popped the next day).  A few things I would recommend are to get the large mangos and ones that are a little bit on the firmer side (still ripe though).  I used about 2.5 of the little mangos per jar and by the time I was done really didn’t look forward to cutting up another mango.  A lot of juice came out of squeezing the pit and rinds which I just added to the bowl.  I’m pretty sure the natural sugars will be sufficient to keep them from turning brown though if they do it doesn’t mean that they’re bad just a little oxidized (also the reason to ensure that the entrained air is kept to a minimum).  I’m excited to see how they hold up.  Will update when I do.

Bonnie's Paleo 'Granola'

I mentioned the other day the Paleo 'Granola' that Bonnie gave me to try.  It was truly amazing and I've managed to get the recipe from her to share with you here.

Paleo 'Granola'
1 cup sunflower seeds
1 cup pumpkin seeds
1/2 cup macadamia nuts
1/2 cup almonds
1/2 cup walnuts
1/2 cup brazil nuts
1/2 cup pecans
1-1/2 cups shredded coconut
1 tsp dried ginger
1 tsp ground cloves
1 tsp cinnamon
1 tsp cardamom

Put the nuts and seeds in a food processor and pulse until you get the desired consistency.  Then add coconut and spices.  Mix well and then toast in a frying pan on low heat with coconut oil until golden brown.  Be sure to use low heat otherwise it might burn.  Serve with fruit, coconut milk, almond milk or on its own as a snack.  Yum!


Bonnie's Paleo 'Granola'

I loved her version and made my own over the weekend.  The recipe is really versatile in that you can add any combination of nuts and spices and other goodies that you prefer.  I added sultanas and cacao nibs to mine with some flax seeds and didn't pulse up the sunflower seeds to keep a bit more texture/ crunch.  Just use what you prefer/ what you have available.  Experimentation is the fun part.  Again though be sure to toast on low heat - I used my cast iron frying pan for this which worked really well.  Enjoy!

10/15 - a whole new world (cue Aladdin)

Partnered up with Stimo and had a good go through this one.  When we finished the last 300m run Coach Match (at his desk) made a comment that it sounded like we’d just finished a WOD – it felt like it too.  We did the runs together then broke down each movement into alternating sets of 10.  None of it was too difficult which meant a solid, steady pace making it feel way more intense than a warmup.  Can I say I actually didn’t mind the burpees.  They felt a bit easier today (I know, I never thought I’d say that either!).

Strength

My back is still hurting from the heavy deadlifts a few weeks back (and especially after sitting all weekend) so I did strict presses instead.  Coach Tim had mentioned that the sets of 5 deadlifts should be at about 75% of your 1RM so I used the same formula – I did however need to get out a calculator (thanks iphone) to figure it out – so 1RM is 35kg * .75 = 26kg which is an odd number to load onto the bar so I just went with 28kg and it was good.  The last rep on the two rounds I did it was a struggle but not impossible.  Pretty solid effort and another blank spot filled in on the PR board.

This was a good WOD but also something I struggled with.  I won’t go into great detail about my weekend but I did the Landmark Forum and although very resistant and skeptical going into it on Friday I managed to get a lot out of it.  The biggest being letting go of a big part of my past – or rather a small moment that has had a huge impact on me for the past 30ish years.  Anyway, like I said, not going to get into it much BUT… but… it lifted this huge weight off of me over the weekend, I have just felt lighter throughout my entire being and it’s been fantastic.  I noticed this a lot in the WOD – that’s the point of this.  There was just more space to fill which I noticed most in my breathing – my heartrate was racing – moreso than it would have been had I done this WOD last week – there was just more space within me for my breath to go, into places it’s never been before and it was amazing and exhausting. 

My head was also trying to play games with me but I was fighting back and perhaps that’s also a part of why it was much more exhausting than it had ever been.  On the run I was already thinking about how horrible the thrusters would be and while doing the thrusters I was on to thinking about the cleans and every time these thoughts entered into my consciousness I fought back against them – why should I be thinking of the thrusters when I was running – just run, focus on the run, that moment, each step.  Then on the thrusters, same thing – just think about this one rep, this moment and not something that is going to happen later.  So yes, it was a pretty epic WOD, so simple on paper and yet such a change from within me.

Can I also mention how doing strength of strict presses made the thrusters a little bit more challenging?  I still managed to do at least 3 reps at a time though would always rest after 9 reps knowing that the last rep was going to go into unbroken hang cleans (which I did managed every time).  It was good overall and I actually kind of liked the new focus, the new me.

Had some great conversations after class as well – some with people I’ve talked to plenty of times but never had that depth of conversation and some with people I’ve never truly had a conversation with beyond the hey how’s it going level so that was also very cool. 

Mobility
Glutes

Oh the mobility… I spent at least 20 or so minutes after class on just my glutes – they are super tight and pulling on everything (I think this is the issue with my back).  This was on top of the 10 or so minutes before class that I did the same.  The more I mobilize the more I find more spots I need to mobilize – an endless cycle but there are worse things in life.  I’m going for physio/ needling on my back tomorrow again, I think I need it – it seems fine and then I move a certain way and it sends this agonizing pain through my body so pretty sure something isn’t right.

WLC
Still going.  Made my awesome pulled pork again for this week as it’s so easy – throw a pork shoulder in the slow cooker and cook over night.  In the morning – take it out when it’s still hot and shred it with two forks.  Done.  I also make a quick and easy (and at midnight this week) paleo BBQ sauce.  I don’t really measure anything when I cook but I will outline the basic premise which you can modify to your liking if you choose.

Paleo BBQ Sauce
Tomato Paste
Apple Cider Vinegar
Date Paste
Onion
Garlic
Spices of your choosing (salt, pepper, garlic powder, chili, paprika, etc.)

I always start with a base of tomato paste (check the label that it’s WLC compliant, there are some that are solely tomatoes) – empty jar into a pot and warm on the stove.  I then add vinegar – usually about ¼ cup or so for one large jar of tomato paste but again I just free pour – mix and taste – repeat.  It’s an easily adjustable recipe.  In the past I have made this recipe with honey but since the WLC started I’ve used date paste for anything that requires a bit of sweetness – the best thing I’ve done is have a container of this in my freezer to just scoop from as needed – so easy.  Again, I just added – probably 2 tablespoons or so to give it a bit more depth of that sweet/ sour.  Then it’s all up to you.  Since it was midnight that I was making this I just added some salt, pepper, garlic powder and paprika (for that smoky spiciness) and mixed and tasted and adjusted as needed.  If I had more time/ wasn’t so lazy then I would have used fresh garlic and some diced onion but the recipe is flexible.  As I was adding ingredients, adjusting flavors, etc. the sauce was heating up and I let it simmer for a bit before taking it off the heat.  In this case I put it in the fridge but it’s just a matter of mixing it with the shredded pork and eating.  So tasty and this time I made extra sauce for Angie as she loved it last time.  Don’t be worried about measuring, trust your tastebuds.

9/19 - A Six-Pack for Christmas

First off a few of things to get out of the way upfront both blog related and non-blog related…

Paul – thank you for reading my blog, I apologize for implying that you couldn’t cook/bake – I promise I will taste test your cooking any time (please?)… haha.  I *knew* better when I wrote that yesterday I do  however find it awesome that you’ll try new recipes – I mean when was the last time that you made chocolate cupcakes (with no sugar, butter or flour) in the microwave?  *That* was more my point.  This WLC is (partly) fun!

Secondly, I forgot about just how exhausting I get the first week of eating clean.  I remember the conversations with Pete about it last time and his reassurance that it will pass – my body is just purging all the crap – but wow.  Tired.  I a two hour nap on both Saturday and Sunday (though also pushed my body hard both those days) and was in bed no later than 10pm since Sunday night – with getting up at 6ish I am sleeping for 8 hours a night and most nights (last night was an exception) I’m sleeping solidly straight through and yet, so.very.tired.  Can’t wait for this to pass – though it’s a good indication that I load my body with more crap than I realize when not entirely focused on what I eat so that’s a positive for me.

Thirdly (and lastly) – Perth drivers – what’s up?  Driving while on your cell phone is dangerous enough but this morning on my commute to work I saw a woman putting on her makeup at red lights (and sometimes even still as the light was green and traffic was moving) and though I thought that was bad – I saw a dude who pulled out a book at a red light – a real solid book that he was reading, while driving (well stopped but still) – are we really that busy that we need to drive and read now?  Oddly enough the book was called ‘1000 places to see before you die’ – I think that dude better hurry up, dare I say he’s pushing his luck?


















Alright on to bigger and better things.  Namely the six-pack I’m going to have for Christmas if Coach Match has any say in it. 

Kirst coached us tonight and it was a nice change up.  The warmup was the opposite of Coach Tim’s structured mini-WOD the night before.  With Kirst we had fun gossiping/chatting while warming up which makes counting quite difficult so we just sorta winged it and laughed about it and chatted some more.  It was a smaller class too which allowed all this to happen and still be an effective warm-up.

Then to test our mobility – have a good laugh – she had us keep our arms overhead (thumbs pointing back) and squatting to depth trying to keep our arms locked out – quite difficult actually.  We then repeated this motion with our arms in the same position but with our hands like we were gripping the bar.  Kelly Starrett had these same moves on mobilitywod.com to test ‘Is it your shoulders?’.

I know I was under 20 minutes but couldn’t remember *exactly* when all is said and done but that’s about the right mark give or take a few seconds in either direction. 

Going in we all knew this was going to be a long WOD – 30 minute cut-off – and it was great as we haven’t done many long WODs lately it seems.  My abs were already quite sore from the 100 sit-ups the night before so I knew the first chunk of work was going to hurt.  I had to remind myself going in that it wasn’t  a sprint and that I’d have to pace myself if I wanted to survive.  I kept a steady pace all through the sit-ups, not stopping but also nowhere near as fast as I was the night before.  Hard part done – or so I thought.   

I had a plan going in this time (unlike the night before) where I was going to break the 40 reps into 4 sets of 10 for each movement and bang out the DU’s and Sit-ups pretty much in one go as best I could.  This didn’t quite work out.  I did the first 2 sets of SDHP as sets of 10 but could start to feel my arms fatiguing a bit so I did the final 20 as sets of 5.  I was surprised how hard they started to feel so quickly.  The DU’s were pretty good – a few large chunks in the 30+ ranges which made them go pretty quickly – I’d take a few deep breaths when I’d trip up and then get back at it trying to find that relaxed, zen place I can go to with doing DU’s that makes it easier to just keep going.  It was good.

The push presses were a killer.  Definitely surprising for sure.  I did 8 sets of 5.  Didn’t even try to go for 10 as I knew it’d burn me out and it’d be a hard place to come back from.  I started push jerking right from the start knowing I’d have to rely on my legs.  I made it through those and it was back to another round with half as many reps.

My tailbone was taking a beating during the ab mat sit-ups even with a yoga mat under me.  I (like many others it seems) lost a bit of skin on my ass.  Ouch!  The lifts on the second round were really tough.  Definitely had to use my legs to get it done and thankfully had used them in the first round to save my arms a bit more.  I did all the lifts in the second round in sets of 5.  The DU’s were pretty good.  I was really trying to get the 50 unbroken and managed to trip myself up at 46 – what a pain to get untangled just for 4 more.  No biggie though. 

Kayla was long done as I was doing the push presses again and she came over to urge me on.  It was funny afterwards (after we’d hassled Glen with lots of tough love to get finished), I realized that Kayla had been surprisingly gentle on me when I was near the end and I asked her about this because normally we are full of tough love in both directions (depending on the day) and she said she could see the pain in my face already and knew I was at that suffering point.  Thanks Kayla.  I do love training with you even on the days you shout at me to pick up the bar when I really don’t want to – it’s nice to have that push in whatever form – some days just in picking weight to load on the bar – I push myself more to try and keep up because you’re in the same class and I’m getting better because of it!

I can now feel every single ab muscle individually.  I asked Coach Match about it later, if it was his plan to have us doing 100+ sit-ups two days in a row and he said it’s just how it worked out but that he was giving the gift that everyone generally wants for Christmas – a six-pack – and that he couldn’t just bestow it on us on the day but rather had to get a head start.  Hello summer, we’ll be ready for you!

Today was my last WOD before Primal Pairs on Saturday with my lovely partner Jane.  I am pretty excited, a little nervous but know full on that it’s going to be a great day of fun and challenges.  My body does need these two days to recover and hopefully figure out how to survive effectively on 8 hours of sleep.

Another perfect day for eating.  I enjoy my black coffee and tend to let it linger all morning which slows my water consumption until later in the day so I need to literally drink from both hands to stay better hydrated rather than trying to catch up but it’s going well otherwise (other than the detoxing my body is going through).  I had Brenda’s leftovers for lunch which was awesome – two meals out of one – and Angie’s curry for dinner.  So good. 

I’ve also got a new little lazy easy trick for my morning smoothies – namely around the almond milk. I don’t mind making almond milk in larger batches but since I only use it in my smoothies it tends to go bad before I get through it all which is both a waste and annoying.  I don’t want to be making it every other day either so… I now soak some almonds over night and in the morning I rinse them out, toss them in the blender with three times as much water and blend while I’m preparing the other goodies for my smoothie.  And since I’m lazy efficient (perhaps lazy *is* the correct word here) I don’t even strain out the almond meal in the bottom I just keep it in there.  I figure since I’m already added LSA (instead of protein powder) it really makes no difference.  I fill up the blender with a banana (or a couple since I keep getting the mini ones from the market), some (straw)berries, spinach (thanks Bonnie), chia seeds (which I mixed right in with the LSA in the jar in my fridge), cinnamon and some UDO 369 and blend.  It’s an awful green colour (thanks to the spinach) but the chia seeds give it a good texture (not exactly smooth but sort of) and it’s flavorful and while not as packed with protein as when I was using the 180 Nutrition Protein powder it is pretty close with the LSA and chia seeds (I add one more scoop of that then I did with the protein powder and it’s about ¾ of the protein it had been).  It works for me and like most other recipes I use I tend to go for easy over complex otherwise I’d probably never eat anything.

WLC Banana Muffins/Bread

Took my favorite banana bread recipe and remade it using only WLC compliant ingredients.  The batch ended up being more than the usual one loaf size which was actually a good thing as I made mini-muffins with the extra and these turned out much better than the ‘bread’ did. 

Banana Bread/Muffin Recipe

3-4 mashed bananas
3 eggs (2 might have been okay)
¼ cup date paste
¼ cup coconut oil
Blend all the above and add to
3 cups almond meal
1 tsp baking soda
¼ tsp salt
Mix and then add
¼ flax seeds
½ cup cacao nibs
½ chopped nuts
Bake until done (again, I didn’t actually time this)

Note that all measurements are approximate – I oringinally had only 2 cups of almond meal (per old recipe) but found I had to add more to get the right consistency for banana bread.  The last items you can play around with as well to your preferences. 

As I mentioned, the mini-muffins turned out quite well.  They cooked easy and came out whole which is more than the (failed) banana bread which stuck to the bottom of the pan (even though I coated it in coconut oil) so it was a bit of a fail in that sense.  They both taste really good though and are fairly close to the original version.  The date paste worked really well for sweetness and the cacao nibs easily replaced the hint of chocolate that I usually add though with a bit more crunchiness thank chocolate chips.

WLC Day 1... baseline WOD and food, simple tasty food...

Kicked off the whole life challenge (wlc) today at far too early a time this morning.  We met up at Cooee with all the Cell participants and got measured and wod-ed.  It hurt me way more than expected.

AMAZING (and easy) applesauce

AMAZING (and easy) applesauce

(yes, all caps are necessary)

Made up this easy and awesome recipe tonight that is paleo and whole life compliant... another sweet treat!

Buy a bag of the sweetest apples you can find (this is essential as there is no other sweetness added)
Peel, core and cut up apples
Toss into a pot
Add a cup to a cup and a half of water
Add cinnamon, vanilla or any other spices you'd like
Cover and bring to a boil
Reduce to a simmer with lid half off and let reduce
Be careful to stir often as the water evaporates
Once most (but not all) of the water is gone remove from heat
Blend
Eat
Enjoy

Yes, it's pretty much the date butter/ paste recipe but with apples and it tastes just as good.  It's great to eat as it is or to use in your favorite recipes.  I have a carrot cake recipe that I'm eager to try it out with but I'll save that for next weekend.

Paleo Banana Walnut Chocolate Muffins


The latest paleo recipe that I tried. Noticed that I have another similar recipe that includes almond butter but I much prefered this version. They are lighter and bundles of bite sized goodness. I was quite amused after Pete and Tim had tried them and Pete's first question was 'are those paleo?'... see - eating healthy can also be tasty!

I don't know the source of the original recipe (sorry), my changes/ additions are in bold.

Paleo Banana Walnut Pecan Chocolate Muffins

Ingredients:
2 ripe bananas (I just used the ones I had - probably about 6 or so small ones and added more almond flour/ coconut at the end to make up to muffin consistency)
2-1/4 cups almond flour
1/2 tsp baking soda
1 TBSP cinnamon (sadly I forgot this)
4 TBSP coconut oil (approximated as mine was solid)
3 eggs
tsp vanilla
1 cup Enjoy Life chocolate chips (used dark chocolate chips but can also coarsely chop up a dark chocolate bar)
1 cup chopped walnuts (I used pecans and approximated based on what looked tasty to me)
1/4 cup (approx.) flax seeds
1/2 cup (approx.) coconut flakes

Directions:
Preheat oven to 350 degrees
In a large bowl mash bananas with a fork
add eggs, coconut oil, and vanilla, mix
whisk to get rid of any large chunks
I'm lazy so the bananas, eggs, coconut oil, and vanilla went into the blender until smooth
In a smaller bowl combine the dry ingredients (almond flour, baking soda, and cinnamon)
Slowly stir dry ingredients into the wet ingredients until fully mixed.
I added wet into the bowl of dry ingredients and mixed with a fork - I then added a bit more almond meal and coconut because I had excess bananas (it's all very scientific - clearly)
mix in Walnuts pecans and chocolate chips
drop spoonfuls into lined muffin pan
Bake for approx. 15 mins (this was a good time for the mini muffins, the large ones needed another 5 minutes)
Eat!
